In this case, the gentleman had been turked out of 4 days pay by an unscrupulous contract manager.
To him it meant to be cheated or swindled. Sounds better in a Bristol accent too.

"türken" means something akin to cheating. It's most commonly used in conjunction with gambling and used car enhancement. It's usually things that are "getürkt", not persons.
